Background of the Study
Indigenous food processing techniques in Ughelli North have long served as cultural markers, reflecting the ingenuity and resilience of past communities. These techniques, which include fermentation, drying, and traditional milling, have been passed down through generations and continue to influence contemporary culinary practices (Efe, 2023). Archaeological findings, such as ancient grinding stones and storage vessels, support the continuity of these methods and provide insight into historical dietary habits and socio-economic organization (Oghenekaro, 2024). Ethnographic studies reveal that these practices are deeply embedded in the community’s identity, influencing not only food security but also social cohesion and ritual practices (Amadi, 2025). Statement of the Problem
The erosion of indigenous food processing techniques in Ughelli North poses a threat to cultural continuity and heritage preservation. Modernization and industrialization have led to the decline of traditional methods, resulting in a loss of valuable historical knowledge. Inadequate documentation and insufficient transmission of these techniques contribute to their gradual disappearance. This study seeks to address these challenges by investigating the historical significance of indigenous food processing practices and proposing measures to revitalize and preserve these cultural traditions (Uche, 2023).
